I keep notes on my sessions the same way I keep notes on features and denominations, and the pattern never changes. The posted win screenshot shows the pay, never the two hundred spins of dust beforehand. My spin sample is tiny compared to the maths of the machine, and so is everyone else's, which is why one big night means nothing either way.
Club cage is hard to argue with though. Last time I had a decent run at the local I was paid before my drink went flat, whereas the variance on the newer pokies over at Crown will happily eat a couple of hundred A$ while you wait for the feature that may never land.
